Sugar Crust for Baked Goods

As a child, I loved eating the sugar crust off of baked goods. The powdery and sweet consistency works well with sweet bread and adds another layer of texture. This recipe is straightforward and can be used over yeast breads or pastries. 

INGREDIENTS

  • 1/2 cup sugar
  • 3/4 cups sugar
  • 8 tablespoons butter
  • 1 teaspoon vanilla
  • 1 egg yolk
Since all of the ingredients go into the same bowl, I do my mise en place in the bowl.

Mix all of the ingredients into a paste that you can hold with your hands.

The paste should hold together.

Take the paste and shape with your hands into strips, circles, or any other shapes that you will then place over the dough before it goes into the oven. Once baked, it will crackle a little bit, which is part of the magic. 

You can add food colouring or chocolate powder for variations depending on what you're making.
